Drinks:

Refreshing Classic Lemonade.
Ingredients required:
For simple syrup:
  • 1 cup sugar
  • 1 cup water this is to make simple syrup
  • 1/4 cup fresh mint leaves
For lemonade:
  • 1.5 teaspoons of lemon powder
  • 1/2 cup simple syrup adjust to taste
  • 1/4 tsp salt
  • 1/8 tsp black pepper grounded
  • 2 cups cold water approximately
  • Mint leaves and lemon slices to garnish
  • Ice
Steps for making:
  1. First, make a "simple syrup". Place the sugar, water and mint leaves in a small saucepan and bring to a simmer. Stir so that the sugar dissolves completely and turn off the heat.
  2. After syrup cools off, strain the syrup to remove the mint leaves.
  3. This syrup can be made in advance and can be refrigerated.
  4. Mix simple syrup, lemon juice, salt and black pepper into the water and pour over ice. Garnish with mint leaves and lemon slices.

Cooling Chhas:

Ingredients required:
  • Curd.
  • Chhas masala.
  • Water.
  • Ice cubes.
Steps for making:
  1. Take curd in a jar. 
  2. Add chaas masala for a tempting flavour.
  3. Add water and blend it well till a slight foamy consistency is achieved.
  4. Transfer it to a glass, and add some ice cubes.
  5. Chilled and masaledar buttermilk is ready to delight you.

Reviving Lemongrass jasmine iced tea.

  • Half cup lemon juice or 2.5 teaspoons lemon powder
  • Lemon slices for garnish 2
  • Water 1 cup
  • Jasmine Green Tea Bag 1
  • Honey half cup
  • Lemongrass 5-8 pcs muddled
  • Dash of grenadine
Steps for making:
  1. Bring 2 cups of hot water and steep jasmine green tea for 3 minutes.
  2. Lemongrass 5-8 pcs muddled and mixed with jasmine green tea.
  3. Using a large spoon, gently press the tea bags and lemon grass against the glass. Add honey, and stir until dissolved.
  4. Pour tea and lemongrass honey mixture into the glass. Serve chilled green tea with ice cubes, lemon slices and a dash of grenadine.

Desserts:

Fruit Custard:
Ingredients:
  • 2.5 cups whole milk
  • 5 tablespoons sugar
  • 3 tablespoons custard powder
  • 3 tablespoons whole milk warm or at room temperature
  • 1.5 to 2 cups chopped mixed fruits – apples, mangoes, sapota, banana, pears, strawberries, pomegranate
Steps for making:
  1. Take milk in a thick bottomed pan or saucepan and keep it on the stovetop. Bring the milk to a gentle heat or simmer.
  2. Whilst the milk is getting heated, in a small bowl, take 3 tablespoons of warm milk from the saucepan. Add 3 tbsp custard powder.
  3. You can opt to take the 3 tablespoons of warm milk from the milk which is getting heated up in the pan or warm 3 tablespoons milk separately in a microwave oven or on the stovetop.
  4. With a whisk stir very well to make a smooth slurry or paste without any lumps.
  5. When the milk has come to a gentle heat, add the sugar. Stir very well so that the sugar dissolves.
  6. Keep the heat on low and then add the custard paste at a time in small portions.
  7. As soon as you add one portion of the custard slurry or paste, stir quickly so that lumps are not formed. Finish off all the custard paste this way.
  8. Keep on stirring often while the custard is cooking, so that lumps are not formed. Cook for about 5 to 6 minutes on a low heat.
  9. The mixture will thicken slowly. For a thicker custard, cook for a few more minutes. Allow the custard to cool at room temperature. Also keep in mind, that as the custard cools, it will thicken more. You can also keep the custard in fridge to chill it before adding the fruits.
  10. Chop the fruits. Use seasonal fruits. Avoid citrus fruits and melons. The fruits I used – apples, papaya, banana, strawberries and pomegranate.
  11. Once the custard has cooled, add the mixed fruits. Combine to mix.
  12. Serve fruit custard garnished with some more fruits and pomegranate arils or add some chopped nuts or dry fruits.

Snack:

Dahi papdi chaat:
  • 13 Papdi
  • 3 tbsp Potatoes, boiled and chopped
  • 3 tbsp chickpeas, boiled
  • 3 tbsp onion, finely chopped
  • 5 tbsp curd, whisked
  • 3 tsp green chutney
  • 3 tsp date tamarind chutney
  • pinch of chilli powder
  • pinch cumin powder
  • chaat masala
  • pinch of Himalayan pink salt
  • 1 tbsp tomato, finely chopped
  • 3 tbsp sev
  • 1 tsp coriander, finely chopped
Steps for making:
  1. firstly, take 13 papdis in a serving plate. 
  2. Top with 3 Tbsp potatoes and 3 Tbsp chickpeas.
  3. additionally, sprinkle 2 tbsp chopped onion.
  4. Now take 3 tbsp whipped curd and drizzle it over it.
  5. additionally, add 2 tsp green chutney and 2 tsp tamarind chutney.
  6. Sprinkle chilli powder, cumin powder, chaat masala and salt.
  7. furthermore, add 1 tbsp onion and 1 tbsp tomato.
  8. now add 1 tbsp curd again, 1 tsp green chutney and 1 tsp tamarind chutney.
  9. Top with 3 tbsp sev and garnish with 1 tsp coriander.
  10. Finally, enjoy dahi papdi chaat with a hot cup of tea.
